Clear The Roads, Cool Springs: Chuy’s Open For Business (And Heading For The ‘Boro)

Nashville, we have a confession to make. We got to try out the new Chuy’s in Cool Springs before its official grand opening on Monday evening, and we forgot to fill you in. Our feeble excuse? Food coma.

Chuy’s really doesn’t need reviewing (we were actually late for our reservation because we couldn’t squeeze our car in among the Texas license plates). The place was jam-packed with loyal Chuy’s Facebook fans enjoying a free meal, and we could barely navigate through them to the bar to order a tasty Chuy’s ‘Rita. And at the grand opening on Tuesday, things weren’t any different – our undercover Chuy’s operative reports that he waited 45 minutes for a table.

If you’ve gotten this far and are completely baffled, you must not be from Texas (it’s okay, neither are we). Chuy’s is a funky tex-mex restaurant with a cultish following, and their first location outside of Texas just happens to be (almost) in town (as if Cool Springs traffic needed to get any worse). Chuy’s must see a bright future in Middle Tennessee – Plans are already in the works for a Murfreesboro location to open. The Murfreesboro restaurant will be the second in Tennessee and the 17th location overall for the chain. The ‘Boro Chuy’s will move in at the former Davy Crockett’s building on Northwest Broad Street, and will be open for business in Spring 2010.

    Now I can't wait to get home for Christmas. Chuy's queso...it will be a Christmas miracle!

    I like Chipotle as much as (and probably more than) the next person, but how can you compare assembly-line fast-food burritos to Chuy's? They're completely different.
  • Count my vote (as a Texan) for Chipotle. Not driving to Cool Springs is only a small part of the advantage--everyone will soon see. (Or not see, as the Cool Springs folks tend to be funny about thinking anyplace else can possibly be superior. . . )

    I lived in Austin-(The Chuy's that I ate at was up on the left side of Lamar). It was delicious, and I have been to the new cool springs Chuy's 5 times so far, and they are delicious also.
  • Forget Chuy's. I was never impressed when I lived in Austin. Bring on that Chipotle!

    Headed down there right now for dinner. My Texas plates that I took off my old car when I got the Fit are still inside of it. Wondering if I take them to the hostess stand, if it'll get me to the head of the massive impending wait.
  • Not sure on that one, but apparently if you wear a Chuy's shirt they'll cut you a deal on a brand new one. Maybe Texas plates work the same magic?
